Creamy Carrot, Yam Soup

Soup is such a great healthy option for lunch or dinner, as you can add so many veggies to help incorporate more vitamins into your diet. I love this soup because it’s easy to prepare and super yummy.

There are so many nutrients in this soup. The yams and carrots provide potassium, dietary fibre, vitamin C and vitamin B6 to name a few. It also has celery which is key for a soup base when sauteed with carrots and onions.

For the broth of the soup, if you want to keep it very simple, you can just use water but you will want to season it well with salt and pepper. If you want to add a bit more flavour to the soup, try using a bit of vegetable broth or chicken broth and top it off with water. (measurements below). Although not in this recipe, you could also try bone broth in your soup which can add some calcium and iron to the soup.

Let’s get into the recipe; Here is what you’ll need:

Ingredients: (these measurements are for 4 servings, feel free to adjust accordingly)

Directions:

  1. In a large pot, saute onions and garlic in olive oil. Add salt and pepper to taste.

  2. Cut up carrots, celery and yams into cubes and place them in the pot.

  3. Let the vegetables cook until a strong aroma is present.

  4. Add vegetable broth and water and let simmer for 1 hour.

  5. Once all vegetables are soft in the water, using a blender or emulsifier, blend the soup until smooth.

  6. Serve and enjoy!
